Rissoli Potatoes

Peel, boil, and mash 8 med. size potatoes adding 2 tbs. butter and 1/4 cup of milk as you are mashing. Add 1 tsp. salt and pepper. Mix in 1 tsp. of minced garlic,  1 tbs. dry parsley, and 1/2  cup grated carrot   Lightly grease a muffin pan.  Fill muffin cups with the potato mixture to the very top.  Sprinkle with Parmesan cheese and  Paprika. Bake in a 350 oven for 10 min. or until lightly browned. Remove and brush lightly with a little butter.

Brown Sugar and Mustard Glaze

  1/2 cup brown sugar, 2 tbs. prepared mustard.  The last 20 min. of your cooking time remove ham from oven. Spread half of the glaze all over the ham. Place back in the oven for 15 Min's.  Remove.  Add the last half of the glaze,  draine  pineapple slices and cherries!  Securing with tooth picks. Cook for 5 more min. Remove and let stand for 15 min.

Oat Cakes

                                                                                                                                                                                                       
3 cups flour, 3 cups rolled oats, 1 cup white sugar, 2 tsp. salt, 1 tsp. baking soda, 1 1/2 cups lard, 3/4 cup cold water.  Mix dry ingredients into a large bowl.  Work in lard with a pastry blender or fork.  Add water gradually.  Roll thin.  Cut into squares. Place on a lightly greased cookie sheet. Bake in a 350 oven until lightly browned.

Putin Pie

1 - 2  lbs ground beef ,1 large chopped onion, 1 can beef broth ,  french fries, mozzarella cheese, pie crust. This is a wonderful way to enjoy comfort foods.  Simple yet very pleasing!   Tips:  Make sure the dishes you  choose are oven safe.  These Putin's are made individually so dishes smaller then pie plates are recommended. Cook 1-2 lbs ground beef, with chopped onions, 1 tsp. salt & Pepper.  Drain.  Add 2 cups of beef broth  to the cooked ground beef. Bring to a  boil.  Mix together 2 tbs of corn starch with a tsp of water . Stir in your ground beef mixture making a gravy.   Set aside.  Begin by rolling out pie crust thinly.   Place in your  greased dishes. Bake in a 425 oven just until the pie crust starts to turn brown.  Remove from oven and cool slightly.  To the bottom of your pie crusts grate enough  mozzarella cheese  to cover the bottom.  This will help the gravy from leaking through.   Fill the crust with cooked fries.  Cover with the ground beef & gravy mixture. Add chopped statuted green peppers.  Cover with Mozzarella cheese. Place back in the oven until the cheese is melted. About 5 Min's. Carefully watch that the crust doesn't burn!!

Shepard's Pie

Cook 2 lbs Ground Beef, with one small chopped onion, 1/2 tsp. each salt & pepper. Drain and place in a casserole dish.  Spread 1 can of vegetables (your choice) over the ground beef.  Layer 1 lg. can of cream corn over the vegetables.  In a separate pot boil 6 med. potatoes. Mash then spread over the top of the other ingredients!  Sprinkle with dried parsley & Paprika,  Return to a 350 oven for about 15 min. or until golden on top!
